Why parsley?

Parsley is a wonderful medicinal herb. It contains more vitamin C than any other vegetable, with 166mg per 100g (4oz). This is three times as much as oranges and about the same as blackcurrants. Since parsley contains so much vitamin C, it can fight off and protect the body against certain illnesses such as the common cold. Parsley's exceptionally high vitamin content increases overall energy and vitality.

Parsley is a very good source of folic acid, one of the most important B vitamins. Consuming foods that contain folic acid, such as parsley, is a good idea for people that want to prevent diseases such as heart arthritis or diabetes. Folic acid is also a critical nutrient for proper cell division and is therefore very important for cancer prevention in the colon, and in women, the cervix.
