Why amaranth?

Amaranth is a gluten-free grain that is extremely high in protein and amino acids. One cup of amaranth contains 28 grams of protein. It is a great source of B vitamins, zinc, and folic acid.  Each of these minerals improves brain function and memory. Amaranth is also high in calcium sporting three times as much as milk. This makes it highly effective in its use to treat and prevent osteoporosis.
