Why buckwheat?

Buckwheat is a hardy and nutritious fruit. It is rich in B vitamins, omega-3 fatty acids, minerals, and essential amino acids. Buckwheat has been known to reduce blood pressure and lower LDL (bad) cholesterol. It’s beneficial effects are linked to its rich supply of flavonoids. Flavonoids are phytonutrients that extend the action of vitamin C, protecting against disease. Buckwheat also contains about 86 milligrams of magnesium in a one-cup serving. Magnesium relaxes the blood vessels and delivers nutrients, improving blood flow while lowering blood pressure.

Eating foods high in insoluble fiber, such as buckwheat, can actually prevent the formation of gallstones. Researchers believe that insoluble fiber speeds up the intestinal transit time, reduces the secretion of bile acids, and lowers triglycerides, thereby inhibiting the formation of gallstones.

Buckwheat is also a great source of plant lignin, a complex chemical compound that reduces the risk of heart disease and protects against breast and other hormone-dependant cancers.
