Southwest White Chili
Enjoy this healthy chili recipe that will warm your body and soul!
Ingredients:
2 Tbsp olive oil
11⁄2 lbs. chicken breast, cubed
4 green onion sprigs, chopped
4 Cups chicken broth
1-4oz can green chilies
2-19oz cans Navy beans
1-2 tsp cumin (to taste)
1 tsp oregano
1 tsp garlic powder
1⁄8 tsp cayenne pepper
1⁄2 Cup fresh chopped cilantro
Directions:
Heat oil in a pot. Cook chicken and onions 4 to 5 minutes over medium heat. Stir in chicken broth Chilies and spices. Simmer 20 minutes. Add beans and fresh cilantro and simmer for an additional 5 minutes.
Garnish with tortilla chips, cheese, and or sour cream, if desired. Enjoy!
